Watanabe's Paella Recipe

If you are like me you definitely wanted to attend Watanabe's cooking class. Hell, I would have eaten that paella so fast, and I am allergic to shellfish. Ha!
I found a recipe for you to try. I am sure you will find it enticing. And then you can whip it up and pretend like you went to the class with Dok Mi. 
And since it is all in writing, you don't have to worry about Enrique's bad translation skills.
  He's so adorable.... I will let him get away with it this time around.

What you need:
(Makes a serving for 8) 
2 lbs skinless, boneless chicken breast (cut into 2 inch pieces)
2 cups uncooked short grain white rice
1 quart chicken stock
1 onion chopped
1 red bell pepper chopped
1 lb chorizo sausage removed casings and crumbled
1 lb shrimp (optional)
2 lemons, zested
2 tablespoons olive oil
3 cloves of garlic crushed
1 teaspoon crushed red pepper
 1 pinch saffron threads
1 bay leaf
1/2 bunch parsley chopped
1 tablespoon paprika
2 teaspoons dried oregano
salt and pepper to taste

Directions:
Step 1:
in a medium bowl mix together the olive oil, paprika, oregano and salt and pepper. Stir in your chopped up chicken to coat them. Cover and pop in the refrigerator.

Step 2: 
Heat up 2 tbs of olive oil in a large skiller over medium heat. Stir in your garlic, red pepper flakes and rice. Continue to cook the dry rice and mixture for about 3 minutes. Enough to thoroughly coat the rice with oil.  

Step 3: 
Stir in saffron, bay leaf, parsley, chicken stock and lemon zest. Bring to a boil and cover. Let it simmer for about 20 minutes. 

Step 4:
In a sperate skillet heat more olive oil on medium heat. Stir in marinated chicken and onion. Cook about 5 minutes. Stir in your sausage and bell pepper. Cook about 5 more minutes. (At this point you would add shrimp if you would like. And cook another 5 minutes until shrimp is pink.) 

Step 5:
Spread rice mixture onto a serving plate and top with meat mixture!
  

Viola!!! Paella!!
